Ingredients

Soy Curls Lettuce Wraps

  • 8 oz soy curls (225 g)
  • ¾ cup Teriyaki sauce (180 ml)
  • 2 tablespoons soy sauce
  • 12 leaves lettuce
  • 1 cup carrots, shredded (150 g)
  • 2 cups red cabbage, shredded (180 g)
  • ½ cucumber, finely chopped
  • ½ cup green onion, sliced
  • Vegan ranch, for topping
  • Cilantro, for topping
  • Sesame seeds, optional for topping

Instructions

  1. In a medium bowl, cover the soy curls in hot water for 15 minutes, then drain and press the excess water.
  2. Place a large non-stick pan over medium heat and add the soaked soy curls together with the Teriyaki sauce and soy sauce.
  3. Cooking, occasionally stirring, until all of the liquid has been absorbed.
  4. Divide the flavorful soy curls between the lettuce “wraps” and top with fresh veggies, ranch, cilantro and sesame seeds.

Notes

  • You can create your own marinade using vinegar, sugar, tahini, chili sauce, garlic and ginger if you don’t have Teriyaki sauce at home.
