How to Make Divinity Candy

  1. Line Baking Sheet: Line a large baking sheet with parchment or wax paper. Set aside.
  2. Whip Egg Whites: In the bowl of your stand mixer fitted with the whisk attachment, beat the egg whites on high speed until stiff peaks form. Replace the whisk attachment for the paddle attachment and set aside.
  3. Cook Sugar, Corn Syrup & Water: In a medium, heavy bottom saucepan, combine the sugar, corn syrup and water over medium heat. Stir frequently until the mixture comes to a boil. Place a candy thermometer onto the side of the pot and allow to boil without stirring until the mixture reaches 260°F (hard ball stage). This will take 10-15 minutes. The mixture will still be light in color.
  4. Remove from Heat: Remove the mixture from the heat and turn the mixer back onto high speed. Slowly pour in the hot candy mixture in a steady stream until all is added.
  5. Add Vanilla & Mix: Add in the vanilla. Allow this to mix on high for 6-8 minutes, until the mixture is thick and just loses its glossiness and holds its shape. If the mixture doesn’t hold its shape when you pull the paddle attachment out, continue mixing until it does. You can also test this by scooping out a spoonful of the candy and placing it on the parchment paper. If it holds into a ball, it’s ready.
  6. Add Pecans: Using a wooden spoon or rubber spatula, hand-stir the chopped pecans into the mixture.
  7. Assemble: Drop by heaping tablespoonful onto the lined baking sheet. You can spray your spoon or scoop with nonstick spray to help the mixture come off the spoon easier. Alternatively, you can line an 8×8 pan with parchment, coat it with nonstick spray and spread into the pan using an offset spatula.
  8. Let Set: Allow the candy to set up completely before cutting and/or serving.

Tips for Success

  • Whip Egg Whites Until Stiff Peaks Form: Make sure your egg whites are fully whipped before making the sugar mixture for your candy. Beat them on high speed until stiff peaks form.
  • Dullness Indicates Doneness: Once the mixture loses it’s glossiness, check it immediately to see if it will hold its shape. If you overmix it, your candy will become dry. There is a sweet spot right after it stops being glossy.
  • Don’t Store in a Humid Area: This candy is best kept in a cool, dry place. It will become sticky if exposed to humidity.
  • Try Different Flavors: In addition to adding other nuts or dried fruits to your candy, you can also get creative with the extract you use. Almond, peppermint or coconut would be great!

How to Store Homemade Candy

Divinity candy should be stored, airtight, for up to 5 days. It’s best not to expose your candy to humidity. If you want to store your candy long-term, you can keep it in an airtight container in the freezer for up to a month.

    FAQs

Why is divinity candy so hard to make? ›

Divinity is a candy that is primarily made only around the Christmas holidays in the South. There are a number of reasons for that, the primary one being Southern weather, particularly in the Deep South where humidity rules the atmosphere most of the time. Humidity equals wet, and wet equals candy that often won't set.

What is divinity candy made of? ›

Divinity is a confection made from egg whites, corn syrup, and sugar. It's similar to nougat, fudge, or marshmallow. Tip: replace the sugar with brown sugar to create "sea foam." Other ingredients can be used to give the candy other tastes, like chopped dried fruit and chopped nuts.

What is the difference between meringue and divinity candy? ›

In a meringue, the sugar syrup is cooked to about 240°F or until the sugar forms a soft, malleable ball when a spoonful is dropped in cold water. For divinity, the sugar is taken a bit further to 250°F (or the firm ball stage) where it can hold more structure.

What is the difference between nougat and divinity? ›

The only difference between making nougat and making Divinity, I saw, was that nougat requires that after blending beaten egg whites without about half of your hard-ball-stage syrup, you heat the rest to near hard-crack before blending it in. So the Divinity process is basically an easier version of the nougat process.

    Why does divinity fail? ›

Now, making divinity comes with all kinds of warnings about humidity and weather. You can't make it if it is "too" humid or if it's raining. The moisture in the air will keep the candy from setting and drying properly.

Why is my divinity not fluffy? ›

Allow it to rest for about 15 minutes. This will absorb more moisture and will allow your sweet treat to harden. If you want your divinity candy to soften up a bit add hot water a tablespoon at a time and beat it again. Repeat the process until you get the desired fluffy consistency.

Why is my divinity chewy? ›

Divinity is a nougat-like sugar candy that is aerated with egg-white foam. It's a cross between a meringue and a candy, and can be soft and chewy, or hard and crunchy depending on temperature and ratio of sugar syrup to egg whites.

Does divinity need to be refrigerated? ›

Divinity candy can be stored in an airtight container at room temperature for up to 2 weeks. It can also be stored in the refrigerator for up to 1 month. If you are storing divinity candy in the refrigerator, let it come to room temperature before cutting it into squares.

Why is my divinity crumbly? ›

Beat until the candy holds its shape, five to six minutes. (Do not overmix or the candy will get stiff and crumbly.)

How long can you store divinity candy? ›

Layer fudge pieces or divinity between waxed paper in an airtight container to prevent from quickly drying out. Store at room temperature up to 2 days or in the refrigerator for up to 1 month.

Why is divinity candy called divinity? ›

It's a billowy light, super-sweet, airy candy confection and it tastes...well, divine. Hence the name.

    What makes divinity grainy? ›

Humidity is nothing more than water vapor in the air and, as the moisture does with meringue and with many candies, it will almost always affect the way your divinity turns out. Shoot for a candy-making day when humidity is at 40% or lower.

Is divinity the same as marshmallow? ›

Actually, divinity is a candy that has the texture of a marshmallow, although there are no marshmallows used in the recipe. It's also similar to fudge, but still so different. (Is that clear enough😉 ?) If you have never tried divinity, this is an easy recipe to give a try and a taste!

What is the difference between fudge and divinity? ›

Fudge is made from sugar, butter, and milk, usually flavored with chocolate or other ingredients like nuts or fruits. It is cooked to a soft and creamy consistency. Alternatively, maple divinity is flavored mainly with pure maple syrup and contains sugar and egg whites.

Is Divinity Original Sin complicated? ›

The game wants you to. Not too difficult, but be aware you'll probably get halfway through the first act before you really 'get' it, at which point you'll want to start over. After doing so, you'll get to the start of act 2, and then you'll really get it for sure this time and want to start over again....

Does humidity affect making divinity candy? ›

Consider this: divinity hates humidity. It's best to make divinity on a cool, dry day. If it's humid (over 50%) or rainy, the candy might end up with a more gooey, or grainy texture.

How hard is divinity original sin? ›

There are five different difficulty modes or ways to experience the game beyond the typical easy or hard -- plus there are a few extras in the Definitive Edition. Unfortunately, some of the difficulties can be, well, difficult, even for those used to playing similar-style RPGs.
