Added cucumber to veg. Tossed veg (carrots, radish, cucumber, 1/2 green onion) with a bit of rice wine vinegar and salt while prepping other things. Marinated meat in an extra 1/2 sauce recipe for an hour. Tossed bok choy with sesame oil and garlic pepper. Grilled both steak and bok choy. Added garlic to sauce ingredients. Drained seasoned veg before incorporating with noodles and sauce. Added sliced grilled steak and sliced grilled bok choy. Family had rave reviews.

I didn't have any limes, so I subbed in pre-squeezed lime juice from the plastic lime. Big mistake - it was too tart and while I tried to repair the sauce with more of everything else, it still lacked freshness. This recipe is so simple that it's worth it to use the best ingredients.

This recipe is a gem! The carrots and radish add a necessary crunch to the soba noodles, and the dressing is tangy without being overwhelming. I did add a splash of mirin to the dressing to help cut some of the tartness of the lime, and it was perfect. I marinated a small piece of flank steak in store bought teriyaki sauce the night before, and it really made the flavor pop. I loved searing the bok choy in the meat pan - delicious! Will definitely make again.

Wow! I’d made this again just for the sauce! We substituted tofu instead of steak, and put some of the extra sauce mixed with cornstarch to bake the tofu with. A and can’t wait to try again with some of the other additions people are mentioning!

Took the recs of others for double the dressing, and adding Mirin to it. Also adding cucumbers. A hit for my whole family. Did it for the meat eaters and served the vegetarian by sautéing part of the box choy separately in a fresh pan with sesame oil and using the Nasoya "plantspired" gochujang beef. A real winner for all.

Where's the oil? One tiny teaspoon of sesame oil for an entire entree salad? Cmon! There's a little oil used to fry the beef, but not enough for a salad. Would do well to add two or three tbsps oil here. At the very least, soba or other noodles will stick together without, but definitely better with it.

Very tasty but a lot of moving parts. If cooking this, don’t fix other complicated dishes at the same time! And don’t worry about getting skirt steak. Ant thin cut beef will be fine. Browning the meat is a big spattery mess!

This was amazing, all three of my kids loved this! I doubled the sauce and marinated the meat in half of it for 6 hours, then grilled the meat and bok choy outside to reduce mess. So good!

I do not like my savory food sweet but 1/2 tsp brown sugar is not nearly enough to balance out 1/4 cup of fresh lime juice. I know there’s variation in acidity but would suggest people trust their palate and not the ratios given.

Added pistachios and used coconut oil to cook meat. Next time pan roast the meat using the oven to reduce smoke, add snap peas with bok choy. Cut bok choy into quarts unless really small. Really good

Delicious.. added cucumber as was mentioned, also firm tomato wedges and served with leftover sliced leg of lamb...

Why not make this a hot dish. Thinly slice the steak, then velvetize it. Use a wok to stir fry the meat then remove from wok. Stir fry the vegetables, add back the meat, then add the noodles. Serve in bowls.

Use low sodium soy or this recipe comes out super salty. I also added garlic and chilis for a bit of extra spice

So good!! Thought the dressing was perfect as is (used 1.5 limes for ¼ cup). Subbed purple cabbage for bok choy. Tossed the noodles + veg with all of the dressing and then added sliced steak and scallions on top.

I needed a quick dinner and this fit the bill. For the 2 of us a 1 lb bison hanger steak, 3 oz soba noodles, about 5-6 oz of spinach. Sauce made from 1 juicy lime, equal amount of Tamari sauce, splash of sesame oil and mirin. Carrots, radishes, scallions, and cilantro. Quick, tasty, loved the textures.
