Hoewel je hier elke week steevast vegetarische recepten ziet voorbijkomen, ben ik nog steeds een echte meatlover! Dit recept voor Philly Cheese steak sandwich is er letterlijk en figuurlijk eentje om je tanden in te zetten!
Wat is een Philly Cheese Steak Sandwich?
Een cheese steak sandwich is een lange ‘footlong‘ (30 cm) sandwich met dun gesneden biefstuk op pistolets en daarop gesmolten kaas. Hij komt oorspronkelijk uit de Amerikaanse stad Philadelphia en is inmiddels een zeer populair fastfood gerecht over heel de wereld! Hier in Nederland bestel ik hem wel eens bij Teds All Day Breakfast voor de lunch, want daar is hij lekker spicy op smaak gebracht. Maar thuis maken wij hem ook wel eens met de dagverse sandwich broden of pistolets van de bakker en een steak gebakken op de barbecue of koekenpan.

‘Beef steak’ of biefstuk is toch wel een prachtig stukje mals vlees he! Niet voor niets vind je naast dit recept voor Philly Cheese Steak Sandwich dan ook meerdere recepten met dit soort malse ‘beef steak‘ hier op de site. Van het klassieke voorgerecht Steak Tartare met pickles, maar ook in combinatie met Aziatische en pittige smaakmakers doet biefstuk het heel goed! Dat wordt nog moeilijk kiezen, want ga je voor een pittige Thaise rode curry met biefstuk? Of Loetje’s Biefstuk Bali met een overheerlijke sambal jus. Maar deze rib-eye met courgette linten en aardappel gratin smaakt ook fantastisch! Evenals deze entrecotes die je eenvoudig op de barbecue kunt bereiden. Dat wordt nog moeilijk kiezen!
De Philly Cheese Steak komt oorspronkelijk uit de Amerikaanse stad Philadelphia en is inmiddels een zeer populair fastfood gerecht over heel de wereld! De ‘footlong’ zachte broodjes beleg je met gebakken stukken biefstuk (Steak) en gesmolten kaas. Na een hap ben je dan ook meteen verkocht!
(* Met de ‘beef steak‘ bedoel ik een mals stuk vlees zoals: entrecote, ossehaas, rib-eye of zelfs sukadelap)
Kruidenmix:
1 tl paprika poeder
0,5 tl knoflook poeder
0,5 tl gedroogde tijm
0,25 tl zout
0.25 tl cayenne peper of chilipoeder
Instructions
Dep de biefstukken droog met een keukenpapier, plaats op een bord, dek af met folie en plaats voor 30 minuten in de vriezer.
Ondertussen pel je de ui, snijd door de helft en vervolgens in halve ringen.Was de paprika, verwijder de steel en zaadlijsten en snijd het vruchtvlees in smalle repen. Verhit wat olijfolie in een ruime koekenpan of hapjespan op middelhoog vuur. Bak hierin de uien en paprika zacht gedurende 5-6 minuten. Schep daarna uit de pan en zet apart.
Check de bereidingstijd en temperatuur voor de pistolets. Meestal dien je deze namelijk nog even af te bakken of op te warmen in de oven. Tip van Betty: Snijd ze vast in de lengte een beetje doormidden maar niet helemaal. Vouw ze een beetje open en leg op hun rug op de bakplaat zodat de binnenste ‘snijvlakken’ ook wat krokant bakken. Laat na het bakken de oven ‘aan’ staan op 220 graden (195 hete lucht), maar haal de pistolets er uit.
Haal de biefstuk uit de vriezer en snijd direct in dunne plakken. Let op dat je het mes haaks op de ‘draad’ zet. Verwarm wederom de koekenpan of hapjespan. Voeg ditmaal ook een beetje extra boter toe en bak de ‘steak’ plakjes gedurende 2 minuten op medium vuur aan.
Voeg daarna de kruidenmix toe, tezamen met de reeds gebakken ui en paprika en verwarm het geheel nog een extra minuut door.
Beleg de broodjes met de steaks, ui en paprika. Verdeel vervolgens de kaas er overheen en druk zachtjes dicht. Plaats de Philly Cheese Steak sandwichesin de oven totdat de kaas gesmolten is. Serveer direct

Variatietip! Voor een supersnelle en eenvoudige variant van de Philly Cheese Steak: gebruik 300 gram rosbief vleeswaren! Je kunt stap 1 dan helemaal overslaan en bak bij stap 4 dus de rosbief aan in de pan.

For an authentic taste of Philly cheesesteak goodness, you're better off trying to recreate the classic recipe at home. In addition to rolls, cheese, onions, and steak, there is one secret ingredient that's sprinkled on both the meat and the bread that can really take the taste over the top: garlic.
Cheesesteak lovers don't always put condiments on their sandwiches, but if they do it is likely to be ketchup. Other options that seem to be more common include sriracha or other types of hot sauce.

A traditional Philly cheesesteak is made with very thinly sliced ribeye steak. If you're looking to make your cheese steak as authentic as possible, definitely go with the ribeye. If you're not hung up on appearances, then you really can use any steak for this recipe.
Bread – we used a crusty baguette for this recipe, but you can also serve the filling over a Hoagie roll. If you to make an authentic Philly cheesesteak, you should use Amoroso roll, although you may have some trouble finding them if you're not from Philadelphia.
Some folks use ribeye, but I think the steaks found in the hind quarter are just perfect for this. Try top sirloin or top/eye of round. Yes, they tend to be a little less marbled and slightly tougher than their ribeye counterparts, but here's where you can game the system: use wagyu!
